This Easy Cheesy Potato soup recipe is one of my favorite comfort foods for cold winter weekends I have been making it for as long as I can remember and everyone loves it! I hope you enjoy it too!
- 7 medium potatoes
- 2 carrots
- 1 stalk celery
- 3 cups milk
- 2 cups water
- 1 tsp salt
- 1 tsp pepper
- 3 tbsp margarine
- 3 tbsp flour
- 1 tsp season salt
- 3 cups shredded cheddar cheese
Clean and peel potatoes, carrots and celery
Dice vegetables into 1//2 inch pieces and place in a stock pot
Add milk, water, table salt and pepper and cook over medium heat until vegetables are tender
In a small bowl melt margarine then add flour and season salt and mix well then whisk into the soup and stir until soup is thick and bubbly (about 10 minutes) Add cheese and stir.
Serve topped with additional cheese and enjoy!
