Your Shape Update and Healthy Snacking Challenge

As you may have noticed I haven’t really been updating you on my Your Shape progress lately. I am still trudging along with Jenny trying to better my life but it has been really hard lately. I haven’t been feeling well, the kids have been sick so I am not getting much sleep and I was away for the better part of 3 weeks totally off my program. Surprisingly while I was away I didn’t do too bad , I only gained about 3 pounds back (which I lost again this past week). I tried to watch what I ate while I was gone and I wasn’t totally good the whole time but I did try to make better choices and not to over indulge. I also did a ton of walking while I was gone, The Opryland Hotel and Disney World are monstrous! Starting today I am recommitting myself to my weight loss journey and my Your Shape Challenge because I don’t want to look like this forever.
Healthy Snack Challenge
One of the components to a good weight loss program is changing your diet. This is the part I have the hardest time with, I love to eat, I feel like I am never full and I love snacking. I am happy to say I have been able to successfully give up my Pepsi and switch to Diet which 2 months ago was out of the question, never gonna happen, I’d rather die first. But as with everything it’s not as bad as I thought.
We were recently sent a Wal Mart gift card and asked to go shopping for some healthy snack options. Some of the products in my Whrrl story are things that I have everyday and have been lifesavers for me as I try to loose weight and others are things that I am trying for the first time. If you really take a look there are lots of options out there for good tasting snacks that won’t put a complete damper on your diet. I wish it was easier to find generic options for some of these snacks, for example Honey Maid makes a low fat graham cracker, I’d be perfectly happy with Great Value graham crackers, except they don’t offer a lower fat product. After awhile it begins to add up and with 4 kids I need to get as much bang for my grocery buck as possible.
Desserts
I also wanted to share a few recipes I found with you for some great desserts.
Orange Dreamsicle Cupcakes ~ 90 calories each
1 box white cake mix
1 can diet orange soda
1 box sugar free orange jello
1 tub Cool Whip Light
- combine cake mix with orange soda and mix well (DO NOT add any other ingredients)
- distribute mix evenly to make 24 cupcakes; cook according to package instructions
- cool cupcakes completely
- mix Jello according to directions
- poke several holes in the tops of the cupcakes using a fork
- pour a small amount of Jello into the holes in the cupcakes
- refrigerate until Jello sets
- top with a dollop of Cool Whip and enjoy!
Don’t like orange? mix it up a little! Try chocolate cake with diet cherry soda and cherry Jello, or maybe yellow cake mix with diet 7 up and lemon Jello, the possibilities are endless!
Another option, leave the Jello out of the cupcake and mix the dry Jello in with the Cool Whip to flavor the “icing”
Can’t say no to your Reese’s PB cups? try these ~ only 75 calories each
1 tub Cool Whip Light
1/3 Cup Reduced Fat Creamy Peanut Butter
1/4 Cup Hershey’s Light Chocolate Syrup
- Line a 12 cupcake pan with cupcake holders (foil ones work best).
- Whisk together 1 Cup of Cool Whip and the peanut butter until smooth.
- Fold in remaining Cool Whip.
- Divide the mixture into the liners evenly (approx. 2 1/2 tablespoons each).
- Top each cup with a dollop of chocolate syrup. Freeze.
